  • 9 oz hearts of palm noodles or zucchini noodles

  • 1 cup shredded chicken (optional)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/3 cup water
  • 1 tablespoon pine nuts (optional)
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a food processor, combine basil leaves, avocado, garlic, olive oil, lemon zest, salt, and water. Blend until smooth, scraping down sides as needed.
  2. Cook hearts of palm noodles or zucchini noodles per package instructions; drain and return to pot.
  3. Stir in the avocado pesto sauce until fully coated. If using shredded chicken, add it now.
  4. Heat through over low heat for a couple of minutes and serve immediately.
