  • 1/2 cup uncooked quinoa
  • 5 oz arugula (about 56 cups)
  • 1 can chickpeas (15 oz), drained
  • 2 medium avocados, cubed
  • 1 orange, peeled and chopped
  • 1/2 cup slivered almonds
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tbsp orange juice
  • 2 tbsp lemon juice
  • 1 clove garlic, crushed
  • 1 tbsp Dijon mustard
  • 1 tbsp pure maple syrup
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa and cook it in vegetable broth according to package instructions (about 15–20 minutes).
  2. While quinoa cooks, toast slivered almonds on a sheet pan under the broiler for about 2–3 minutes until golden brown.
  3. In a bowl, whisk together olive oil, orange juice, lemon juice, garlic, Dijon mustard, maple syrup, salt, and pepper.
  4. In a large salad bowl, toss arugula with half of the dressing until well-coated.
  5. Add cooked quinoa, chickpeas, oranges, avocado, toasted almonds, and feta cheese to the arugula. Drizzle with remaining dressing and gently toss.
  6. Serve immediately for optimal freshness.
