  • 2 tablespoons milk

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 425°F and line a muffin pan with liners.
  2. In a mixing bowl, mash the banana until smooth, then stir in the applesauce, milk, and vanilla extract.
  3. In another bowl, whisk together the flour, sugar, salt, baking powder, baking soda, and cinnamon.
  4. Create a well in the dry ingredients and pour the wet mixture into it. Stir gently until just combined; do not overmix.
  5. Fill each muffin liner about three-quarters full with batter.
  6. Bake for 5 minutes at 425°F; then reduce temperature to 350°F and bake for an additional 15 to 18 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool briefly in the pan before transferring them to a wire rack.
