  • 2 large eggs
  • 1 teaspoon King Arthur Pure Vanilla Extract
  • 2 2/3 cups (320g) King Arthur Unbleached All-Purpose Flour or King Arthur Gluten-Free Measure for Measure Flour
  • 2 teaspoons King Arthur Apple Pie Spice
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 cup (227g) milk
  • 3 tablespoons (64g) boiled cider
  • 10 tablespoons (141g) unsalted butter, melted
  • 1/4 cup (85g) boiled cider
  • 1 1/4 cups (248g) granulated sugar
  • 4 1/4 teaspoons King Arthur Apple Pie Spice

Instructions

  1. Preheat your oven to 425°F and lightly grease a mini muffin pan.
  2. In a large bowl, mix together granulated sugar, brown sugar, softened butter, vegetable oil, and salt until smooth. Add eggs one at a time, followed by vanilla extract.
  3. In a separate bowl, whisk together flour, apple pie spice, baking powder, and baking soda.
  4. Combine milk and boiled cider in a measuring cup until well mixed.
  5. Gradually add dry ingredients to the wet mixture in thirds, alternating with the liquid mixture until just combined.
  6. Fill muffin pan wells with batter and bake for 7 to 9 minutes until golden brown.
  7. Prepare topping by mixing melted butter with boiled cider; dip baked doughnut holes in this mixture followed by spiced sugar.
