  • 12 oz cherry or grape tomatoes, halved
  • 2 medium cucumbers, quartered
  • 1 medium red bell pepper, diced
  • 1/3 cup red onion, chopped
  • 1/3 cup pitted black olives, sliced
  • 1/3 cup pitted green olives, sliced
  • 4 oz crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons red apple vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of boiling water with a pinch of salt until al dente. Drain using a colander and let cool.
  2. In a mixing bowl, whisk together olive oil, lemon juice, vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumbers, bell pepper, red onion, olives, and feta cheese. Pour the dressing over the salad.
