  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 12 small red chilies, finely chopped (optional)
  • Vegetable oil for frying
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 12 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar (optional)

Instructions

  1. In a bowl, mix rice flour, all-purpose flour, baking powder, salt, and pepper.
  2. In another bowl, whisk egg and cold water together.
  3. Combine egg mixture with dry ingredients to form a smooth batter.
  4. Fold in chopped shrimp and herbs.
  5. Heat vegetable oil in a frying pan over medium-high heat.
  6. Drop spoonfuls of batter into the hot oil and fry until golden brown (about 3-4 minutes per side).
  7. Prepare the dipping sauce by mixing fish sauce, lime juice, sugar, warm water, minced garlic, and optional chilies.
