  • 2 large raw beetroots
  • 5 cups mixed green salad
  • 1 avocado
  • 2 medium cucumbers
  • 1 red onion
  • ⅓ cup walnuts
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp red apple vinegar
  • Sea salt and freshly ground pepper to taste
  • ½ cup feta cheese
  • 3 Tbsp pomegranate seeds
  • 8 basil leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap beets in foil and roast on a baking sheet for about 45 minutes until tender. Once cool, peel and dice.
  2. In a mixing bowl, combine greens, diced avocado, cucumber slices, and thinly sliced red onion; toss gently.
  3. Whisk together olive oil, apple vinegar, salt, and pepper in a small bowl.
  4. Add roasted beets to the vegetable mixture and drizzle with dressing; toss until well-coated.
