  • 8 boneless, skinless chicken breasts
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh-squeezed lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp Greek seasoning
  • 1 tsp poultry seasoning
  • 1 tsp dried oregano
  • Black pepper to taste

Instructions

  1. Trim visible fat from the chicken breasts and make small slits to help the marinade penetrate.
  2. In a bowl, combine olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper.
  3. Place the chicken in a Ziploc bag and pour the marinade over it. Seal and refrigerate for at least 6 hours or overnight.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and let it drain in a colander.
  6. Grill the chicken for about 4 minutes on each side until cooked through (165°F internal temperature).
  7. Allow resting before serving.
