  • 3/4 cup dairy-free milk
  • 1/4 cup neutral oil
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt (if using unsalted butter)
  • 1 teaspoon apple cider vinegar (optional)
  • 1/8 teaspoon ground cinnamon (or ground nutmeg)

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare an 8-inch round cake pan by lining the bottom with parchment paper and greasing it.
  2. In a bowl, mix melted vegan butter, brown sugar, maple syrup, and chopped pecans until well combined.
  3. Pour the pecan mixture into the prepared pan evenly.
  4. In another bowl, whisk together flour, granulated sugar, baking powder, and salt.
  5. In a separate bowl, combine dairy-free milk, oil, melted vegan butter, vinegar, and vanilla extract until smooth.
