  • 2 cups all-purpose flour
  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup (1 1/2 sticks) cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces (1 bar) good quality semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer or bowl, cream cold butter with light brown sugar and granulated sugar until smooth. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually incorporate the dry ingredients followed by chopped chocolate and chocolate chips.
  5. Scoop dough into large balls (about 1/2 cup each) and place them on the prepared sheets. Press extra chocolate chips on top if desired.
  6. Bake for 12–13 minutes until edges are golden brown but centers remain soft. Optionally sprinkle with sea salt after baking.
