Thanksgiving Quesadillas are a scrumptious and satisfying way to transform your holiday leftovers into a delightful meal. These quesadillas feature warm flour tortillas stuffed with tender turkey, savory stuffing, sweet cranberry sauce, and melted Monterey Jack cheese.   • 1 package (8 ounces) Monterey Jack cheese, shredded
  • ½ cup mayonnaise
  • 1 tablespoon fresh sage, chopped
  • 4 (10-inch) flour tortillas
  • 1 pound leftover turkey, sliced
  • 12 ounces leftover stuffing
  • ½ cup whole berry cranberry sauce

Instructions

  1. In a medium bowl, combine the shredded cheese, mayonnaise, and sage until well mixed.
  2. Spread the cheese mixture evenly over each tortilla. On one half of each tortilla, layer with turkey, stuffing, and cranberry sauce. Fold the opposite side over to enclose the filling.
  3. In another bowl, mix remaining mayonnaise with sage to create the dipping sauce; set aside.
  4. Heat a skillet over medium heat and cook two folded quesadillas for about 2 minutes on each side until golden brown and crispy. Repeat with remaining quesadillas.
  5. Slice each quesadilla in half and serve warm with the creamy dip.
