Thai Mango Salad is a vibrant and refreshing dish that showcases the sweet and tangy flavors of ripe mangoes combined with crisp vegetables. This colorful salad is perfect for warm days or as a light appetizer at any gathering.

  • 2 ripe mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 medium carrots, julienned
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes (about ¼ cup)
  • 2 tbsp soy sauce (in place of fish sauce)
  • 1 tsp chili flakes

Instructions

  1. Wash all produce thoroughly. Julienne the carrots and slice both the cucumber and red bell pepper into thin strips.
  2. In a large mixing bowl, combine the diced mangoes, bell pepper, cucumber, carrots, and chopped cilantro.
  3. In a small bowl, whisk together lime juice, soy sauce, and chili flakes until well blended.
  4. Pour the dressing over the salad mixture and gently toss until evenly coated.
  5. Chill in the refrigerator for about 15 minutes to allow flavors to meld before serving.
