  • 1 cup diced fresh pineapple
  • 1 cup shelled edamame (steamed)
  • Fresh vegetables (cucumbers, carrots)
  • 2 tablespoons unseasoned rice vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • ¼ cup water
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh lime juice
  • 1 tablespoon sriracha
  • ⅓ cup mayonnaise
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons water
  • pickled red onions (see note below)
  • 1 Persian cucumber (thinly sliced)
  • 1 carrot (peeled into ribbons or thinly sliced)
  • Green onion (sliced + sesame seeds, for garnish)

Instructions

  1. Prepare sushi rice by rinsing it under cold water. Cook according to instructions until tender.
  2. In a saucepan, combine soy sauce, brown sugar, garlic, ginger, sesame oil, and cornstarch to make teriyaki sauce; simmer until thickened.
  3. Cook seasoned chicken in olive oil until golden brown; pour half the teriyaki sauce over during the last minutes of cooking.
  4. Assemble each bowl with sushi rice as the base and top with sliced chicken and desired fresh vegetables.
  5. Drizzle with additional teriyaki sauce and garnish with green onions and sesame seeds.
