  • 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes using a sharp knife.
  3. Chop the kale into bite-sized pieces. Sauté in a skillet with a splash of water or olive oil over medium heat for 5-7 minutes until wilted.
  4. Grease a 9×13 inch baking dish with olive oil. Layer half of the sweet potato slices at the bottom, followed by half of the sautéed kale, half of the heavy cream, and half of the grated cheese. Repeat these layers with remaining ingredients.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 20-25 minutes until golden brown.
  6. Let cool for about 10 minutes before serving.
