  • 4 chicken breasts (approximately 2 lbs)
  • 3/4 cup light coconut milk (divided)
  • 1/2 cup sweet chili sauce (plus extra for serving)
  • 1 lime (juiced)
  • Salt and pepper to taste
  • 8 cups cauliflower rice (fresh or frozen)
  • 1.5 tablespoons coconut oil
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. In a large Ziplock bag, mix 1/2 cup coconut milk, sweet chili sauce, juice from half a lime, salt, and pepper. Add chicken breasts and marinate in the fridge for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill marinated chicken for about 4-5 minutes per side until fully cooked (internal temperature should reach 165°F).
  4. While the chicken rests, heat coconut oil in a skillet over medium-high heat, sauté cauliflower rice seasoned with salt and pepper for about 5-7 minutes.
  5. Stir in juice from the remaining half of lime, additional coconut milk as desired, and cilantro into the cauliflower rice.
  6. Serve grilled chicken on top of cauliflower rice with extra sweet chili sauce.
