  • 3/4 Cup Cane Sugar
  • Lemon Zest and Juice
  • 2 Whole Eggs (large, at room temperature)
  • 3/4 Cup All-Purpose Flour (unbleached)
  • 1/4 Cup Super Fine Almond Flour
  • 1 teaspoon Baking Powder
  • 1/8 teaspoon Sea Salt

Instructions

  1. Grease an 8-inch springform pan with butter or coconut oil, line the bottom with parchment paper.
  2. Pit and slice cherries; set aside halves for topping.
  3. Preheat oven to 350°F (180°C).
  4. In a mixer, beat butter and sugar until fluffy; add lemon zest, juice, extracts, and eggs.
  5. Sift in flours, baking powder, and salt; mix gently until just combined.
  6. Fold in quartered cherries and transfer batter to prepared pan.
