  • 2 tablespoons olive oil
  • 1/4 cup honey or maple syrup
  • 1/4 cup sriracha (or favorite hot sauce)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 2 garlic cloves, minced
  • Optional garnishes: chopped green onions, toasted sesame seeds, lime wedges

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, salt, and pepper in a mixing bowl. Spread evenly on the baking sheet.
  3. Roast for 25–30 minutes until golden brown and tender-crisp, flipping halfway through.
  4. Meanwhile, make the sauce by simmering honey (or maple syrup), sriracha, soy sauce (or tamari), vinegar, garlic, and optional ginger in a saucepan.
  5. Once roasted, coat the cauliflower with the sauce in a large bowl. For extra caramelization, broil for an additional 3–4 minutes.
