  • 1 lb paccheri pasta
  • 2 cups cherry tomatoes, halved
  • 4 garlic cloves, minced
  • 1 tablespoon fresh basil, minced
  • 1 tablespoon fresh oregano, minced
  • 2 tablespoons panko, toasted
  • 1 teaspoon crushed red chili flakes
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Cook the paccheri pasta according to package instructions; reserve 1/4 cup pasta water before draining.
  2. In a large skillet over medium-high heat, add olive oil and half the cherry tomatoes. Sauté for about 5 minutes until softened.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in half the fresh herbs and cook for about 2 minutes.
  5. Add cooked pasta, reserved pasta water, remaining tomatoes, chili flakes, and herbs into the pan. Mix gently until heated through and coated.
  6. Top with toasted panko and garnish with heirloom tomato slices, parmesan cheese, and fresh basil leaves. Serve immediately.
