  • 1 egg yolk
  • 1/3 cup cream cheese
  • 1 Tbsp fresh lime juice
  • 4 Tbsp fine turbinado sugar
  • 3 peaches (or nectarines)
  • Handful each of strawberries, raspberries, blackberries, blueberries
  • Mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Roll out puff pastry into a rectangle (10"x7").
  3. Place on parchment-lined cookie sheet; shape edges to create a border.
  4. Brush edges with egg wash (egg yolk + water).
  5. Dock the center with a fork and add weights (beans).
  6. Bake for 20 minutes until golden; cool on wire rack.
  7. Whisk cream cheese with lime juice and sugar until smooth.
  8. Spread cream mixture over cooled crust.
  9. Layer sliced peaches and assorted berries on top.
  10. Garnish with mint leaves before serving.
