  • 1/2 pound Italian sausage
  • 1 cup chopped onion
  • 3 cloves garlic
  • 2 slices bread (fresh breadcrumbs)
  • 2 medium tomatoes
  • 1/4 cup fresh basil
  • 1/2 teaspoon dried oregano
  • 3/4 cup shredded Parmesan cheese
  • 1 large egg
  • 1 large zucchini (about 12 to 14 inches)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and cook Italian sausage until browned.
  3. Cut zucchini in half lengthwise and scoop out the flesh.
  4. Sauté onion, garlic, and reserved zucchini flesh until softened.
  5. Combine sausage with sautéed vegetables in a bowl; mix in breadcrumbs, tomatoes, herbs, cheese, egg, salt, and pepper.
  6. Stuff zucchini halves with the filling.
  7. Bake for 25 to 30 minutes until golden brown on top.
