  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ cup cold unsalted butter (cubed)
  • 6 tablespoons ice water
  • ½ cup heavy whipping cream
  • 2 blocks cream cheese (room temperature)
  • ⅓ cup granulated sugar
  • 2 teaspoons lemon juice
  • ½ teaspoon vanilla extract
  • 1 pound fresh strawberries (hulled and sliced)
  • 1 tablespoon red currant jam

Instructions

  1. In a food processor, pulse flour, sugar, and salt. Add cold butter and pulse until crumbly.
  2. Drizzle ice water and pulse until dough holds together. Shape into a disk, wrap in plastic, and refrigerate for at least one hour.
  3. Preheat oven to 400°F (200°C). Roll out the dough to fit a tart pan, pressing it into the bottom and sides.
  4. Bake the crust for about 25 minutes or until golden brown. Let cool completely before filling.
  5. In a bowl, beat cream cheese, sugar, lemon juice, and vanilla until smooth. Whip heavy cream separately and fold into the cream cheese mixture.
  6. Fill the cooled crust with the cream mixture and top with fresh strawberries brushed with red currant jam.
