  • ¼ cup granulated sugar (for sauce)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar (for crust)
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce by heating strawberries, sugar, and lemon juice in a saucepan until softened. Mash and thicken with cornstarch slurry. Let cool.
  2. Preheat oven to 325°F (160°C).
  3. For the crust, combine graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8-10 minutes.
  4. Beat cream cheese and sugar until fluffy. Add eggs one at a time, then mix in vanilla, sour cream, and heavy cream.
  5. Pour filling over crust; drop spoonfuls of strawberry sauce on top and swirl gently.
  6. Bake in a water bath for about 55-65 minutes until edges set.
  7. Cool gradually in the oven; refrigerate for at least 6 hours before serving.
