  • 4 large eggs, room temp
  • 1 tbsp vanilla extract
  • 1 tsp almond extract (optional)
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sour cream
  • 1 cup fresh strawberries, chopped
  • 1 tbsp flour, to toss with strawberries
  • 1 cup powdered sugar, sifted
  • 23 tbsp pureed strawberries, fresh or thawed frozen
  • 1 tsp vanilla extract
  • A drop of pink food coloring (optional)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a loaf or bundt pan.
  2. Cream together unsalted butter and sugar until fluffy. Add eggs one at a time, followed by vanilla extract.
  3. In another bowl, mix flour, baking powder, baking soda, and salt. Gradually combine with the wet mixture, alternating with sour cream.
  4. Toss chopped strawberries in flour to prevent sinking, then fold into the batter.
  5. Pour into the prepared pan and bake for 60-70 minutes until a toothpick comes out mostly clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.
  7. Blend or mash fresh strawberries until smooth to create puree.
  8. Mix 2 tablespoons of strawberry puree with powdered sugar and vanilla extract. Gradually add more puree until you reach your desired consistency.
  9. Optionally, add a tiny drop of food coloring for an eye-catching pink glaze.
  10. Once the cake has cooled completely, pour the strawberry glaze generously over it.
