  • 1 tbsp vegetable oil
  • 1/3 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 2 eggs, divided
  • 10 oz frozen spinach, thawed and drained
  • 3/4 cup crumbled feta
  • 2 tbsp fresh dill, chopped
  • 1 sheet puff pastry, thawed

Instructions

  1. Heat the vegetable oil in a skillet over medium heat. Sauté the onions and salt until softened (about 4-5 minutes). Add garlic and cook until fragrant (30 seconds).
  2. In a large bowl, mix cream cheese with one egg. Stir in the sautéed onion-garlic mixture, spinach, feta, dill, and season with salt and pepper.
  3. Grease a muffin tin and roll out the puff pastry to form squares. Place squares into the muffin cups and fill with the mixture.
  4. Fold over pastry corners to enclose filling; chill for 30 minutes.
  5. Preheat oven to 400°F. Brush pastries with beaten egg mixed with water.
  6. Bake for about 25 minutes until puffed and golden brown.
