  • 1 cup fresh spinach (chopped)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup dried cranberries (chopped)
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1/2 inch.
  3. In a mixing bowl, combine chopped spinach, cream cheese, dried cranberries, mozzarella cheese, minced garlic, salt, and pepper.
  4. Lay the chicken breasts flat and place a generous spoonful of the filling in the center of each. Fold over the sides and secure with toothpicks.
  5. Heat olive oil in a skillet over medium heat. Sear each stuffed breast for about 3-4 minutes per side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
