  • 2 cups cottage cheese
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 1/3 cup crumbled feta cheese
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash of nutmeg

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Grease a 1 & 1/2-quart casserole dish.
  3. In a mixing bowl, combine beaten eggs, cottage cheese, spinach, feta, onion, melted butter, Parmesan cheese, black pepper, garlic powder, and nutmeg until well mixed.
  4. Pour the mixture into the prepared casserole dish and spread evenly.
  5. Bake uncovered for 40–45 minutes or until nearly set.
  6. Allow to cool for 5–10 minutes before serving.
