  • 1 lb spicy Italian sausage (casings removed)
  • 1 tbsp olive oil
  • 1 small yellow onion (finely diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (15 oz) red kidney beans (drained and rinsed)
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1 cup ditalini pasta (or any small pasta)
  • Fresh parsley or basil (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and minced garlic; sauté until softened, about 5-7 minutes.
  2. Add the spicy Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-6 minutes.
  3. Stir in crushed tomatoes, chicken broth, and water; mix well.
  4. Add both types of beans and ditalini pasta along with oregano, basil, red pepper flakes, salt, and pepper; combine thoroughly.
  5. Bring to a boil; reduce heat to low and let simmer uncovered for about 20 minutes or until pasta is al dente.
  6. Serve hot in bowls garnished with fresh herbs.
