  • 1 large globe eggplant
  • 2 tsp salt
  • 4 T olive oil (2 for brushing, 2 for marinade)
  • 2 tsp red apple vinegar
  • 2 tsp fresh lemon juice
  • 1 tsp garlic puree
  • 1 tsp Aleppo Pepper
  • Fresh parsley and mint for garnish

Instructions

  1. Slice the eggplant into uniform 3/4 inch thick pieces and sprinkle with salt. Let drain on paper towels for 40 minutes.
  2. Whisk together olive oil, vinegar, lemon juice, garlic, Aleppo Pepper in a bowl.
  3. Preheat the grill to medium-high heat.
  4. Rinse and dry the eggplant slices; brush both sides with olive oil.
  5. Grill the eggplants for 4-5 minutes per side until tender and marked.
  6. Remove from grill and coat with marinade; let sit for 10-15 minutes before serving.
  7. Garnish with chopped parsley and mint.
