  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 2 teaspoons paprika
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cinnamon

Instructions

  1. Marinate the beef cubes with half of the vinegar, salt, and a sprinkle of spices. Let sit for at least 30 minutes.
  2. In a heavy-bottomed pot, heat vegetable oil over medium heat. Sauté chopped onions until golden brown (5-7 minutes).
  3. Add minced garlic and grated ginger; cook until fragrant (about 2 minutes).
  4. Stir in paprika, cumin powder, coriander powder, cinnamon, and sugar; cook for another minute.
  5. Add marinated beef and cook until browned on all sides.
  6. Pour in remaining vinegar along with enough water or broth to cover the beef entirely. Bring to a boil then reduce heat to low; cover and simmer for about 1.5 hours or until tender.
  7. Adjust seasoning if needed and serve hot with crispy fries or rice.
