  • 3 tbsp Powdered Sugar
  • 0.5 tsp Vanilla Extract
  • 150 g Frozen Raspberries
  • 3 tsp Powdered Sugar (for raspberry sauce)
  • Speculoos cookies
  • Milk (for soaking cookies)
  • Additional frozen raspberries (for topping)

Instructions

  1. In a mixing bowl, combine heavy cream, mascarpone, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  2. In a saucepan, heat frozen raspberries with powdered sugar over medium heat until it becomes a liquid sauce.
  3. Dip speculoos cookies in milk briefly and layer them at the bottom of your serving dish. Spread half of the whipped cream mixture over the cookies.
  4. Drizzle half of the raspberry sauce over the cream layer and repeat with another layer of soaked cookies and remaining cream.
  5. Finish by topping with the remaining raspberry sauce, crumbled speculoos, and whole raspberries. Refrigerate for at least 2 hours before serving.
