  • 1 lbs spinach
  • 1 medium onion (chopped)
  • 2 large garlic cloves
  • ½ tsp kosher salt
  • ½ tsp black pepper powder
  • 1 tbsp lemon juice
  • ½ cup goat cheese (or feta)
  • 1½ cups feta cheese
  • ½ cup cheddar cheese (grated)
  • 1 large egg
  • 1 cup parsley (chopped)
  • ½ cup pine nuts (toasted)
  • ⅛ tsp nutmeg
  • 16 sheets phyllo pastry
  • ½ cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Thaw and drain spinach if frozen.
  2. Sauté chopped onion and minced garlic in olive oil until translucent. Add spinach and season with salt, pepper, and lemon juice; cook until liquid evaporates.
  3. In a bowl, combine the cooled spinach mixture with crumbled cheeses, beaten egg, parsley, nutmeg, and pine nuts.
  4. Brush a pie pan with olive oil. Layer two sheets of phyllo pastry, brushing each layer lightly with oil. Spread some filling on top and roll into a tube; coil into the pie pan.
  5. Repeat layering until all filling is used. Brush the top with olive oil.
  6. Bake for about 25–30 minutes until golden brown.
