Ingredients

Scale
  • 1 1/2 cups dry short grain sushi rice
  • 6 eggs
  • 1 can (12 oz) turkey (or a suitable substitute)
  • 3 sheets roasted seaweed nori
  • 2 1/2 teaspoons soy sauce
  • 2 tablespoons sugar
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon salt

Instructions

  1. Rinse the sushi rice until the water runs clear and cook it with water in a rice cooker or pot. Mix rice vinegar, sugar, and salt into warm rice once cooked.
  2. Slice turkey into 1/4-inch thick pieces. Heat a skillet over medium-high heat and cook until browned on both sides.
  3. In a bowl, combine soy sauce and water. Sprinkle sugar on turkey slices, add the soy sauce mixture, and simmer until caramelized.
  4. Whisk eggs in a bowl. Cook portions of egg mixture in a skillet to form an omelet; roll tightly and cut to match turkey length.
  5. Assemble musubi by layering sushi rice, omelet, and turkey on nori strips; wrap tightly.
