  • 1 lb ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 cup salsa
  • 6 small tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add diced onion to the skillet and sauté until softened, about 3-4 minutes. Stir in minced garlic for an additional minute.
  3. Mix in the taco seasoning and diced tomatoes (with juice) and remove from heat.
  4. Spray the inside of the slow cooker with non-stick cooking spray. Layer half of the tortilla strips at the bottom followed by half of the beef mixture, black beans, corn, and salsa. Repeat layers finishing with remaining tortilla strips topped with salsa.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, sprinkle cheese on top to melt.
