  • 2 carrots (peeled and diced)
  • 3 celery stalks (sliced)
  • 1 onion (diced)
  • 28 ounces crushed tomatoes
  • 2 cans beef broth (14.5-ounce each)
  • 1 tablespoon Italian seasoning
  • 15 ounces white cannellini beans (drained)
  • 15 ounces dark red kidney beans (drained)
  • 1 cup uncooked ditalini pasta

Instructions

  1. In a skillet, brown the lean ground beef over medium heat. Drain excess fat and transfer to a slow cooker.
  2. Add diced carrots, sliced celery, diced onion, crushed tomatoes, beef broth, Italian seasoning, cannellini beans, and kidney beans to the slow cooker. Stir well.
  3. Cover and set the slow cooker on low for 6 hours or high for 4 hours.
  4. About 30 minutes before serving, stir in uncooked ditalini pasta. Cover and cook until pasta is tender.
  5. Season with salt and pepper to taste before serving warm.
