  • 2 pounds skinless, boneless chicken breasts
  • 2 pounds potatoes, cut into 1 ½2 inch chunks
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In the slow cooker, combine potatoes with olive oil, salt, pepper, and paprika. Stir until coated.
  2. Place chicken breasts on top of the potato mixture and season with remaining salt and pepper.
  3. In a mixing bowl, whisk together the Parmesan garlic sauce and water/chicken stock. Pour over chicken and potatoes.
  4. Cover and cook on High for 4 hours or Low for 6 hours until chicken is cooked through and potatoes are tender.
  5. During the last 20 minutes of cooking, sprinkle mozzarella (and optional Parmesan) cheese over the top until melted.
  6. Serve garnished with fresh parsley.
