  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Fresh cilantro, chopped for garnish
  • Salt and freshly ground pepper, to taste

Instructions

  1. Prepare ingredients: Cube the beef chuck, chop the onion, mince the garlic, and grate the ginger.
  2. Sauté aromatics: In a Dutch oven, heat oil over medium heat. Add onion and sauté until translucent. Stir in garlic and ginger; cook until fragrant.
  3. Brown the beef: Add cubed beef to the pot; cook until browned on all sides (about 5-7 minutes).
  4. Add spices and liquid: Mix in curry paste, turmeric, cumin, paprika, and crumbled beef stock cube. Pour in coconut milk and mix in tomato paste.
  5. Slow cook: Bring to a simmer. Cover and cook on low heat for 2-3 hours until beef is tender.
  6. Season & serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with cilantro.
