  • 1 1/2 lbs large shrimp (21/25), peeled and deveined
  • 1 lb medium thickness asparagus, woody ends trimmed
  • 4 tsp minced garlic
  • 6 Tbsp butter, diced
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 2 tsp lemon zest
  • Salt and pepper to taste
  • Fresh lemon juice and parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat (400 – 425°F).
  2. Cut four sheets of heavy-duty aluminum foil measuring 14 by 12 inches.
  3. In each foil pack, divide the shrimp and place asparagus alongside.
  4. Drizzle with vinegar, sprinkle garlic, lemon zest, salt, and pepper.
  5. Top with butter cubes.
  6. Seal the packets tightly but leave space for steam.
  7. Grill for about 9-10 minutes until shrimp are pink and cooked through.
  8. Carefully unwrap and serve with fresh lemon juice and parsley.
