  • 4 boneless, skinless chicken breasts (6 oz each)
  • 1 cup jarred roasted red peppers, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup fresh mozzarella cheese, shredded
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a medium bowl, mix chopped roasted red peppers, fresh spinach, minced garlic, and shredded mozzarella until well combined.
  3. Butterfly each chicken breast by slicing horizontally to create a pocket without cutting all the way through. Season both sides with salt and pepper.
  4. Stuff each chicken breast pocket with about 1 cup of the filling mixture. Secure openings with toothpicks if necessary.
  5. Heat olive oil in a large skillet over medium heat. Sear each stuffed chicken breast for about 3 minutes per side until golden brown.
  6. Place the seared chicken in the prepared baking dish and bake for 25–30 minutes or until the internal temperature reaches 165°F (75°C).
