  • 2 boneless chicken breasts, diced
  • 1 cup mushrooms, sliced
  • 1 cup carrots, julienned
  • 1 bell pepper, sliced
  • 1 cup jasmine rice
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups water or broth

Instructions

  1. Rinse jasmine rice under cold water until clear. In a medium saucepan, combine rice and 2 cups of water or broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until fluffy.
  2. Marinate diced chicken in soy sauce for about 5 minutes.
  3. Heat olive oil in a wok over medium-high heat. Add marinated chicken in a single layer and cook for 5–7 minutes until golden brown. Remove from pan.
  4. In the same pan, add garlic and ginger; sauté for 30 seconds. Add mushrooms, carrots, and bell pepper; stir-fry for another 5–7 minutes until tender-crisp.
  5. Return chicken to the pan with vegetables. Stir everything together and season with salt and pepper.
  6. Fluff cooked rice with a fork and serve warm topped with the stir-fry.
