  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes
  • Fresh basil for garnish

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until blended.
  2. Form small meatballs (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a large pot over medium heat. Brown meatballs for about 5 minutes; set aside.
  4. In the same pot, sauté chopped onion until translucent (3-4 minutes).
  5. Add chicken broth to the pot and bring to a boil; reduce to simmer.
  6. Return meatballs to soup and simmer for approximately 15 minutes.
  7. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
  8. Serve warm, garnished with fresh basil.
