  • Salt & black pepper to taste
  • 2 eggs, whisked
  • Optional: garlic powder, chili flakes
  • 1 cup cherry tomatoes
  • 1 cup asparagus spears, trimmed
  • 56 button mushrooms, whole or halved
  • 1 tbsp olive oil or butter

Instructions

  1. Season the salmon fillet with salt and pepper, then pan-sear it in a heated non-stick skillet with olive oil for 3-4 minutes on each side until golden brown.
  2. In the same skillet, sauté the button mushrooms for 4-5 minutes until browned, then add asparagus and cook for an additional 2-3 minutes.
  3. In a separate bowl, whisk together eggs and scramble them in another skillet over medium-low heat until just set.
  4. Blister the cherry tomatoes in a hot pan for about 5-6 minutes or roast them until they burst.
  5. Assemble all components in a bowl and serve warm.
