  • 1 cup uncooked brown rice
  • 2 eggs
  • Diced avocado
  • Salt & pepper
  • Optional: Balsamic glaze

  1. Prepare the brown rice by rinsing under cold water. In a pot, combine rinsed rice, 1 cup water, and salt; bring to a boil, then reduce heat to low and simmer for 25-30 minutes until tender.
  2. Preheat oven to 180°C (350°F). Season the salmon with salt and pepper, place on a parchment-lined baking tray, and bake for 12-15 minutes until cooked through.
  3. Soft-boil the eggs by boiling water in a pot. Gently add eggs and cook for 6-7 minutes. Transfer to an ice bath, cool, peel them.
  4. Assemble by layering brown rice in a bowl, topping with salmon, diced avocado, and halved soft-boiled eggs. Drizzle with balsamic glaze if desired.
