  • 22 ½ pounds beef flank steak (skirt or roast)
  • 1 large onion (sliced)
  • 45 cloves garlic (minced)
  • 2 bell peppers (sliced)
  • 2 tomatoes (sliced)
  • 1 can (8 ounce) tomato sauce
  • Beef broth
  • Vegetable oil
  • Salt
  • Pepper
  • Cumin
  • Smoked paprika
  • Sazon
  • Fresh parsley or cilantro for garnish

Instructions

  1. Trim excess fat from the beef and season with salt, pepper, cumin, and Sazon.
  2. Heat vegetable oil in a skillet over medium heat and sear the beef until browned on both sides.
  3. In the same skillet, sauté onions, garlic, bell peppers, tomatoes, and spices for about 5 minutes. Add the broth and transfer to the slow cooker.
  4. Place the seared beef into the slow cooker and cook on high for 3 ½–4 hours or low for 7–8 hours until tender.
  5. Shred the beef and mix it back into the sauce before serving.
