  • 1 cup cherry tomatoes (whole)
  • 1 medium yellow onion (chopped)
  • 1 head of garlic (halved)

  • 1 cup vegetable or chicken broth
  • 1/4 cup heavy cream
  • Fresh basil leaves
  • 1 teaspoon balsamic vinegar
  • Salt and pepper
  • Sourdough or French baguette (thinly sliced)
  • Shredded Gruyère cheese (enough to cover the toast)

Instructions

  1. Preheat oven to 400°F.
  2. In an oven-safe dish, toss tomatoes, onion, garlic, olive oil, salt, and pepper. Roast for 30-40 minutes until tender.
  3. For stovetop cooking, simmer all ingredients in a large pot over medium heat until tender.
