  • 2 cups cherries (halved, pitted)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spread halved cherries on top, sprinkling lightly with sugar. Roast for about 10 minutes until softened. Allow cooling.
  2. Lower oven temperature to 325°F (160°C). Spray an 8×8-inch baking pan with non-stick spray and line it with parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In another bowl, whisk together granulated sugar, eggs, and egg yolk until light and fluffy. Add melted butter, oil, and vanilla extract; mix until combined.
  5. Gently fold dry ingredients into wet ingredients until just combined. Fold in half of the roasted cherries and chocolate chips.
  6. Pour batter into the prepared pan and spread evenly. Bake for 40-50 minutes or until edges are set but center is slightly underbaked.
  7. Cool completely before cutting into squares.
