  • 2 tablespoons salted butter (melted)
  • 8 oz full-fat cream cheese (softened)
  • ⅓ cup granulated sugar
  • 1 egg (room temperature)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • ¾ cup sour cream (room temperature)
  • Optional: Red, white & blue sprinkles for garnish

Instructions

  1. Preheat oven to 350°F.
  2. Line a mini cupcake pan with liners.
  3. In a food processor, blend vanilla wafers and melted butter until fine crumbs form. Press 1 teaspoon of the mixture into each cupcake liner.
  4. In a mixing bowl, beat softened cream cheese with sugar, egg, and extracts until light and fluffy.
  5. Spoon the cheesecake mixture over the crust in each liner.
  6. Bake for 12-15 minutes until set but slightly soft in the center.
  7. Cool at room temperature before topping with sour cream mixture (blend sour cream with sugar and extracts).
