  • 1 cup cooked jasmine or sushi rice
  • 1 avocado, sliced
  • 1 cup mixed greens (lettuce, arugula, etc.)
  • 1 cucumber, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped mango (optional)
  • Salt & black pepper to taste
  • 1 tsp sesame seeds or furikake
  • 1 tbsp olive oil or sesame oil
  • 1 tbsp rice vinegar or lemon juice

Instructions

  1. Grill or pan-sear the seasoned chicken breast over medium-high heat for 6–8 minutes per side until golden brown and fully cooked. Slice into bite-sized pieces.
  2. In a mixing bowl, combine mixed greens, cucumber, bell peppers, tomatoes, and optional mango. Drizzle with olive oil and vinegar; season with salt and pepper.
  3. In a serving bowl, scoop the cooked rice and top it with sesame seeds or furikake. Arrange the grilled chicken slices around the rice alongside the salad mixture and sliced avocado.
  4. Serve immediately for a fresh meal or pack for lunch.
