  • 1 egg, beaten

  • 2 1/4 cups fresh pitted cherries
  • 3 tablespoons sugar (for filling)
  • 2 tablespoons cornflour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in chilled butter until it resembles coarse crumbs. Stir in beaten egg and milk until just combined.
  3. In another bowl, mix pitted cherries with sugar and cornflour until well coated.
  4. Press half of the crust mixture into an even layer in your baking dish. Spread the cherry filling over this layer and crumble the remaining crust on top.
  5. Bake for about 32 minutes or until golden brown on top. Allow to cool before slicing into squares.
