  • 2 cups vegetable broth
  • 1 cup pumpkin puree
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil. Gradually whisk in polenta until smooth. Stir continuously for about 5–7 minutes until thickened.
  2. In a skillet over medium heat, sauté diced onion in olive oil until translucent (about 3–4 minutes). Add garlic and cook for another minute. Stir in spinach and Italian herbs; season with salt and pepper until wilted.
  3. Preheat oven to 375°F (190°C). In a greased baking dish, spread half of the polenta mixture at the bottom. Layer the spinach mixture on top, followed by the remaining polenta. Sprinkle shredded mozzarella cheese on top.
  4. Bake for 25–30 minutes until golden brown and bubbly.
