  • 6 slices Turkey Bacon, chopped
  • 4 sweet onions, thinly sliced
  • Kosher salt & black pepper, to taste
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups freshly grated mozzarella cheese
  • 2 handfuls fresh sage leaves
  • 2 sheets frozen puff pastry, thawed
  • 2 large eggs + 2 tsp water (for egg wash)
  • Grated Parmesan cheese, for topping

Instructions

  1. In a skillet, cook chopped turkey bacon until crisp; set aside.
  2. Use the same skillet to caramelize sliced sweet onions over medium-low heat for 25–30 minutes until golden. Add apple cider for sweetness.
  3. Preheat oven to 400°F (200°C). Roll out thawed puff pastry on a floured surface and place on baking sheets.
  4. In a bowl, combine ricotta and pumpkin puree; season with salt and pepper. Spread mixture on pastry.
  5. Top with caramelized onions, mozzarella cheese, and turkey bacon. Scatter sage leaves over top.
  6. Brush pastry edges with egg wash. Bake for 25–30 minutes until golden brown.
